Butter-Free Roasted Garlic Mashed Potatoes

- 1 ½ lbs peeled russet potatoes
- 3 tbsp Solvang Olive Roasted Garlic Extra Virgin Olive Oil
- ½ cup skim milk
- Coarse salt and ground pepper
- In a large pot, boil peeled potatoes about 20 minutes.
- Drain and place in a large bowl. Adding Solvang Olive Roasted Garlic Olive Oil and skim milk to the bowl.
- Using a fork or a potato masher, mash the ingredients until smooth.
- Season with salt and pepper
