Summer Berry Salad and our Non-alcoholic Fruit Mimosa

Now is the perfect time of the year to enjoy a fresh Summer Berry Salad with our Solvang Olive Raspberry Basil Vinegar. Enjoy it as a side to pork chops, fried chicken, our Balsamic Teriyaki Chicken Skewers, or as a main course. Summer Berry Salad and Non-alcoholic Fruit Mimosa

Ingredients
  • For Summer Berry Salad
  • 6 cups of Baby Spring Mix
  • ½ cup of sliced purple onion
  • 1 cup of fresh raspberries
  • 1 cup of goat cheese
  • ½ cup of salted candied walnuts
  • 2 cup of Raspberry Basil Vinegar
  • For Non-alcoholic Fruit Mimosa:
  • ½ oz. of Solvang Olive Champagne Mimosa Vinegar
  • 1 cup seltzer water
  • 1 oz. of fruit juice or muddled berries of your choosing
Instructions
  1. For Summer Berry Salad
  2. In a large bowl combine raspberry vinegar with baby spring mix. Toss to coat.
  3. Add sliced strawberries, fresh raspberries, goat cheese, and walnuts to the salad mixture, tossing lightly so as to preserve integrity of the goat cheese.
  4. Enjoy!
  5. For Non-alcoholic Fruit Mimosa
  6. Mix Solvang Olive Champagne Mimosa Vinegar with seltzer water and fruit juice or muddled berries over ice. Recipe makes 1-2 servings.
